FRUIT JELLY OR MARMALADE
10 lbs. SUGAR
1.5 gal. JUICE
1 #10 tin CRUSHED FRUIT
1 lbs. WHISTOJEL
10 lbs. CORN SYRUP
.25 oz. ACID SOLUTION
Strain juice off of crushed fruit. Combine with enough water to
make 1.5 gallons of liquid. Have sugar and Whisto Jel mixed dry in
kettle. Add the liquid to bring to a boil. Add corn syrup. Cook to
222°. Add fruit and cook to 224°. Cut Steam. Add acid solution.
Pour out to cool. NOTE: Any type of fruit may be used.
